[Lake Country’s Cheesecake] is an unbaked cheesecake containing sake lees from 6 different breweries around Biwa Lake. Sake lees are still actively fermenting, therefore, the flavor and taste of the cheesecake changes day by day.
You may enjoy tasting Japanese sake lees from each brewery, quite same as doing a Japanese sake tasting.
 

Awards

In 2013, The Japan Tourism Agency of the Ministry of Land, Infrastructure, Transport and Tourism selected this cheesecake as one of nine “World-class Supreme Souvenirs.”
In 2015, The Japan Ministry of Economy, Trade and Industry selected it as a product for “The Wonder 500TM” event.

About Sake Lees:
Japanese sake is brewed using rice and yeast through a fermentation process. Sake lees are a byproduct resulting from the final process of straining the fermented liquid. Sake lees retain the sake’s own good flavor and bouquet.
 
Confectionary in Lake Country:
Lake Country Cheesecake is made at Kobo chou-chou, a small sweets shop in Higashi-omi City.
Using locally produced products is a key concept in creating our sweets. Kobo chou-chou, makes various items using six unique, carefully selected sake lees from breweries situated around Biwa Lake.

Increasing Wages for the Disabled:
Kobo chou-chou is managed by a (non-profit) social welfare service corporation called Ayumi Welfare Unit as a means for improving the quality of life for disabled persons. Our clients are employed in the shop as its primary workforce. And our goal is to see that the maximum percentage of Kobo chou-chou’s proceeds is paid as wages to enable their self-reliant livelihood through the sales of their own products.
 
Lake Country
Welcome to Lake Country:
Shiga Prefecture is also known as Japan’s lake country, being home to Biwa Lake, the largest lake in Japan. It is surrounded by mountains and dotted with innumerable historic spots. The runoff from these mountains gave birth to the lake country and affords us environmentally rich daily lives.
